    Halve jalapeños lengthwise, scoop seeds. Mix cream cheese + shredded cheddar + cooked sausage + rub. Stuff each half, wrap with 1/2 strip of bacon, secure with toothpick.

    → 165°F · ~75 min

    275°F pit, hickory or apple. Cook until bacon is crisp and filling is hot through. Glaze with BBQ sauce in last 10 min if desired.

  3. 3. Rest

    ~5 min

    Filling is molten — let cool 5 min so it doesn't lava out on the first bite.
